Leftover Curried Rice Lunch

1 tbsp coconut oil (or any other oil you have) 1 onion, finely chopped into 1 cm pieces 1/2 a cup of cooked peas Your leftover rice (I used roughly 2 cups so if you have less, half the ingredients) 1 tsp garlic powder (or 1 garlic clove crushed) 2 – 3 tsp curry powder 2 tbsp soy sauce Salt to taste Optional: rocket leafs to serve (another leftover in our fridge that had to be used)
1. This is reeeeal simple, we always have leftover rice in the fridge so this is a really quick lunch idea. Once you have chopped that onion, heat up the coconut oil in a bigger frying pan (or a wok) and once the oil has melted, toss that onion in.
2. Let it fry for 2-3 mins and then throw in the curry powder to fry together with the onion. Be careful not to burn this, if it gets too dry, add some more oil or water.
3. Once the onion is starting to get transparent or slightly golden, add the rice, garlic powder (or crushed garlic) and the soy sauce. Stir and cook for 2-3 mins once well blended.
4. Now it’s time to throw those peas in there, mix and voila.
5. *If you like, throw some cooked lentils in there for that protein boost, mushrooms would also go great if you have some leftover or serve next to a salad for a fresh touch.*
