Ingredients
1 tbsp Coconut oil (or any oil) 1 tin Chickpeas, drained 1 Onion, chopped 1 cup Spinach or chard (if using chard, chop the bottom bits separate to the leaves) 1 tbsp Yeast flakes 1 tsp Turmeric tsp Black salt
Method
1. Mash the chickpeas in a bowl with a potato masher or a fork.
2. Chop the onion into small chunks. Heat some oil in a frying pan (coconut oil works nicely as it gives a nice flavour, but sunflower/rapeseed oil is fine too), and fry the onion until slightly golden. If using chard, throw the harder pieces into the frying pan and fry for 2-3 mins until they soften.
3. Add the mashed chickpeas, yeast flakes, turmeric and black salt and mix until all chickpeas are covered in the turmeric and look consistently yellow.
4. Finally, add the leaves of chard or spinach (depending on which one you decided to use) and give it a final stir in the pan.
